OENO-Composting : A Manual for Grape Marc Composting

Abstract

This manual was developed under the framework of the European Union-funded SwitchMed program and aims to demonstrate the technical, economic, and environmental viability of composting grape marc, a byproduct of wine production, in Lebanon’s Beqaa Valley. The manual outlines the process of composting grape marc, emphasizing its agricultural and economic benefits, and provides detailed guidance on site selection, windrow dimensions, compost mix, and monitoring schedules. Additionally, it includes an overview of Lebanese legislation related to composting and sustainable waste management practices.
